Funky Fritters | Summer BBQ
Often forgotten, the Sweet Corn Fritter is a fantastic way to feed your friends & family while on holiday.
If you're out camping, the trusty barby is probably getting a good thrashing this summer. How about chucking together a few left overs with a tin of whole corn kernels & serving up some bite sized fritters for a quick lunch or snack.
Here's our basic recipe. (Makes approx 8 Fritters). You can also add whatever leftovers you have handy. Maybe some diced up ham, tinned peas or leftover cooked potato to make your fritters go further?
1 Tin of Whole Kernel corn (drained)
4 Tblsp Self Raising Flour
1/2 Cup of Milk
Salt & Pepper
Finely Chopped Capsicum
2 Rashers of Bacon
In a large mixing bowl add drained corn kernels, onion, capsicum & chopped bacon. Add the egg and mix gently until all ingredients are coated in the egg. Add salt & pepper then flour. Stir until combined. Add milk while stirring to bring the batter to a consistency similar to a pikelet/pancake mix. Spoon onto a medium grill until bubbles form on the top of the fritter, then flip to cook opposite side. Viola..... Corn fritters!
Remember that when using leftover meats you must cook thoroughly! Tinned tuna or salmon can aslo be added for variation.
